Makes about 2 cups

Paleo, vegan, refined sugar free, dairy free, gluten free, nut free, vegetarian
Ingredients:
2 tbsp chia seeds
¼ cup water
½ lemon, juiced (about 2 tbsp)
2 tsp lavender, chopped (optional)
1.5 cups berries (fresh or frozen)
2 tbsp maple syrup or honey to taste
Steps:
Let chia seeds and water soak for 5-10 minutes.
Meanwhile, add everything else to a medium sized pot (lemon juice, lavender if using, berries, and maple syrup). Stir over medium-low heat until berries release most of their juice. Mash them with a fork or spatula to crush large chunks of fruit. Remove from heat and add in soaked chia seeds. Store in fridge and enjoy within 2-3 days.
