Protein-packed crisp and saucy bites. Great as an entree or even as a snack!

Ingredients:
1 package extra firm tofu, pressed between towels to remove water
2 Tbsp GF soy sauce, divided
1 Tbsp sesame oil
1/4 cup cornstarch
cayenne to taste
1 tsp garlic powder
1/2 tsp ginger powder
1 Tbsp vegetable oil
2 Tbsp coconut aminos
1/2 Tbsp fish sauce
Steps:
Be sure that most water is drained and pressed from tofu before you begin. I pressed mine for about 30 minutes.
Cut the tofu into half-inch cubes and place in a lidded container. Drizzle tofu with 1 Tbsp soy sauce and sesame oil. Shake to evenly distribute. Once cubes are evenly coated, shake again with cornstarch, cayenne, garlic powder, and ginger powder.
Heat saucepan with 1 Tbsp vegetable oil over medium-high heat. Sauté the tofu by allowing each side to brown, you should see each piece crisp up. It will likely take 10-15 minutes to get golden color on all sides. Remove from heat and stir in remaining 1 Tbsp soy sauce, coconut aminos, and fish sauce. The sauce should reduce slightly in the hot pan. Serve immediately. Top with sesame seeds if desired.
