The perfect pastry to eat with soups or salads.
Makes 5 medium biscuits

Grain free, no added sugar
Ingredients:
1/2 Cup Blanched Almond Flour
1 Tbsp Coconut Flour
1/4 tsp Xantham Gum (can omit if you don't have it)
1/2 tsp Baking Soda
1/8 tsp sea salt
2 Tbsp Cold Butter, cut into 1 cm cubes
1/3 cup Buttermilk
2 Tbsp Plain Yogurt
2 cloves Garlic
Cheddar Cheese
Steps:
Preheat oven to 425F.
Combine dry ingredients in food processor (almond flour, coconut flour, xanthan gum, baking soda, sea salt). Add cold butter and pulse until you reach pea sized crumbs of butter. Add buttermilk and yogurt and process again, do not over-mix. Stir in chopped garlic.
Form dough into 1 inch tall discs and stuff each disc with a thick slice of cheddar cheese.
Bake on baking sheet for 15-20 minutes, until golden brown. Serve warm.
