CINNAMON PECAN BLONDIES

Think blondies but with a cinnamon brownie-type batter instead... not your everyday cookie bars.

 

Makes 9 small blondie bars

45 minutes or less

Paleo, grain-free, dairy-free, gluten free

 

Ingredients:


1/2 cup cinnamon chips

1 tbsp milk of choice

3 tbsp coconut oil

1 egg

Vanilla


1/3 cup almond flour

1/8 tsp cinnamon

1/8 tsp salt

1/8 tsp baking soda


1/4 cup chopped pecans

1/4 cup semi-sweet or dark chocolate chunks


Steps:


Preheat oven to 325F.


Stir to combine dry ingredients into a mixing bowl (almond flour, cinnamon, baking soda, salt).


In a saucepan, melt cinnamon chips, coconut oil, and milk. When no lumps remain, remove from heat and whisk in egg and vanilla. Add in dry ingredients, chopped pecans, and chocolate chunks.


Spread batter into a greased 8 x 8 glass or ceramic dish.


Bake for 17-20 minutes, until toothpick inserted into the center comes out clean.
